Lima Coffee Roasters is thrilled to announce our first “Direct Trade” coffee from Nicaragua. We are working closely with the farmers to cultivate a relationship that will grow for years to come!
La Familia Blandon has outdone themselves with this special Maracaturra lot from Finca La Misericordia. Freshly picked coffee cherries are sorted and their outer skins are removed. Unlike washed coffee, the sticky fruit layer (mucilage) remains tightly clinging to the green beans. The mucilage-coated beans are placed into sealed, airless fermentation tanks. By depriving the environment of oxygen, the Blandons encourage unique microbial activity to consume the sugars. During the drying process, the fermented mucilage dries into the beans to give them that classic “honey” mouthfeel.
The result? A clean profile packed with flavors that remind us of jammy berries, white chocolate, and sweet florals. This modern process combines classic elegance with a singular experience that’s worth exploring.
