The name honors my father, Jorge, who has spent years studying and experimenting with fermentation techniques, especially Carbonic Maceration, always searching for the perfect balance between complexity, cleanliness, sweetness, and structure in the cup.\u003c\/p\u003e\n\u003cp\u003eFor this lot, he carefully selected a very special area of the farm, always searching for cherries with the ideal potential for this experimental process. We carefully selected only fully ripe Bourbon and Caturra cherries with an average Brix level of 22.3, ensuring high sugar concentration and optimal maturity before fermentation.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eThe coffee underwent approximately 96 hours of controlled Carbonic Maceration in sealed anaerobic tanks rich in CO₂.
